Dirty Rice & Cooking
Dirty Rice: ground pork, onions, celery, bell pepper and a homemade roux are slowly cooked, seasoned and mixed with long grain white rice by hand. Keep product frozen until ready to use. Thaw in refrigerator for 48 hours prior to baking. Preheat oven to 350°F. Remove plastic bag (netting stays in place), place thawed roll in a greased or sprayed roasting pan, cover with foil and bake ~2 hours. Remove foil and bake 15–20 minutes more until golden brown. Internal temperature must reach 165°F. Let stand 10–15 minutes, remove netting, carve and serve.
