Chicken & Sausage Preparation
Pre-cook 2–3 lbs. of chicken and/or sausage. In a 4-quart pot add 2 to 2½ quarts of cold chicken stock or water to the gumbo mix. When dissolved, cover and bring to a boil. Reduce heat and serve over cooked rice.
Seafood Preparation
In a 4-quart pot combine 2 quarts of water and the gumbo mix. Mix well and bring to a boil. Add 2 lbs. of seafood, bring back to a rolling boil for 3–4 minutes, then remove from heat. (If oysters are desired, add at this time.) Let stand covered at least 30 minutes before serving over rice.
Convenient ready-to-use gumbo roux—just add protein and rice.
