Thawing
Frozen in a vacuum sealed bag. Thaw in refrigerator for 48–72 hours. For rapid thaw, place in a clean trash can liner and submerge in cool water for 6–9 hours.
Cooking & Slicing
- Preheat oven to 350°F.
- Place breast side up on a rack in a greased roasting pan; cover wings and legs with foil and loosely tent entire bird.
- Bake covered 2 hours, then uncovered 1½ hours, or until internal temperature reaches 165°F. Baste with butter during last hour if desired.
- Remove and rest 45 minutes; allow extra 20–30 minutes resting before slicing ½”–¾” thick from wing to wing.
