Thawing & Cooking
- Thaw in refrigerator 48–72 hours for best results.
- Cold water bath in sealed bag for 8–10 hours may be used to quick defrost.
- Preheat oven to 350°F. Bake breast side up on a rack in a greased roasting pan. Cover loosely with foil and bake covered 2 hours, then uncovered 1½ hours or to 165°F internal temperature.
- Baste with butter during the last hour if desired and allow to rest 45 minutes before slicing.
Slicing
Allow an extra 20–30 minutes resting time after oven removal. Remove string or netting, slice off wings and legs, then slice remaining bird ½”–¾” thick from wing to wing.
