Café du Monde Beignet Mix, 28 oz — 12-Pack

Café du Monde Beignet Mix supplies the classic fried-square beignets dusted with powdered sugar. Each 28 oz box mixes into dough that yields about two dozen 2-1/4" squares when rolled to 1/8" thickness. Follow the included preparation: mix 2 cups mix with 7 fl oz water and stir until blended. Roll on a floured surface, cut into 2-1/4" squares, then fry in an inch or two of oil at 370°F, basting until puffy and light golden (dough should pop to the surface in 8–10 seconds). Drain well and sprinkle generously with powdered sugar. For best results an electric skillet works best.

Storage/handling: Keep refrigerated after opening. Prepared beignets are best hot; they can be fried up to 2 hours ahead and kept loosely covered at room temperature. To keep warm, place freshly fried beignets in a 200°F oven up to 30 minutes. To make ahead, store dough in an airtight container in the refrigerator up to one week.
