Stuffing Details
The shrimp and sausage jambalaya dressing combines pork sausage slowly cooked with onions, celery, bell pepper and seasonings in a red sauce, mixed with cooked long grain white rice, then hand-mixed with large, plump shrimp that have been cleaned, de-veined and blanched. Whole shrimp are weighed and added to stuffing for consistency.
Thaw & Cook
- Thaw in refrigerator ~3½ days prior to cooking; quick thaw: leave wrapper on and place in cold water 6–8 hours.
- Remove plastic bag; place thawed bird breast side up in greased roasting pan; tent with foil (do not tuck).
- Preheat oven to 350°F; bake ~3½–4 hours until golden, basting with butter occasionally.
- Let rest 45–60 minutes before transferring and carving; support back when moving and remove string and wings for carving.
