Pan-Blackening Directions
- Heat a cast-iron skillet over high heat.
- Dip fish filets in melted butter or margarine, coating both sides well.
- Shake Blackened seasoning generously and evenly on both sides.
- Cook over high heat about 1½ minutes per side until charred and fish reaches an internal temperature of at least 145°F.
For meat or poultry, cook until at least 165°F.
