Boiling Seafood
- Use enough water to cover seafood. Add seasoning and bring to a rolling boil. Add seafood and boil 5 minutes. Remove from fire and let seafood stand 25 minutes.
Steaming Seafood
- Put 3-1/2 inches of water in a pot; when steam escapes add a full basket of seafood and cover.
- Steam shrimp 8–10 minutes; crabs and crawfish 10–12 minutes.
- In an ice chest, layer seafood and sprinkle seasoning between layers. Cover and let stand 12 minutes.
Boiling guide: Crawfish 5 min; Shrimp 3 min; Crabs 15 min. This package boils about 10 lbs crawfish, 2 dozen crabs or 15 lbs shrimp.
