- Use kitchen shears to cut across the face, remove eye sockets and lower mouth, lift the apron and remove gills, then rinse and pat dry before cooking.
Sample Preparations
Grill: Marinate in butter, hot sauce, and lemon, grill 4–5 minutes per side.
Sauté: Soak in buttermilk 30 minutes, dredge in seasoned flour, cook 2–3 minutes per side in margarine and oil. Serve on toasted French bread with lemon.
