Orange & Wild Pecan Rice Salad (excerpt)
- 1 (7 oz) package KONRIKO Wild Pecan Rice
- 1/3 cup chopped celery, 1/4 cup chopped green onion, 1/4 cup chopped parsley
- 1/3 cup toasted pecans, 1/2 cup mayonnaise or spicy mayonnaise, 1/2 cup plain nonfat yogurt
- 1 tsp grated orange rind and 2 (11 oz) cans mandarin orange sections, drained
Cook rice according to package directions (omitting butter for this salad), cool, mix with vegetables, dressing and oranges. Makes 8 servings.
