Chicken & Sausage Gumbo
Pre-cook 2–3 lbs. of chicken and/or sausage. In a 4-quart pot add 2 to 2½ quarts of cold chicken stock or water to the gumbo mix. When dissolved, cover and bring to a boil. Reduce heat and serve over cooked rice.
Seafood Gumbo
In a 4-quart pot combine 2 quarts of water and the gumbo mix. Mix well and bring to a boil. Add 2 lbs. of seafood, bring back to a rolling boil for 3–4 minutes, then remove from heat. (Add oysters at this time if desired.) Let stand covered at least 30 minutes. Serve over cooked rice.
No need to be Cajun—just add meat or seafood and rice.
