Preparation & Use
Use during the boil or steam, or for extra heat sprinkle on shellfish after removing from the liquid. For shrimp, adding 1/2 cup margarine or cooking oil during boiling can make peeling easier. Increasing soak time intensifies heat. If too spicy, rinse with water. Adding ice after boil slows cooking, increases flavor absorption and improves peeling.
Alternate Steaming Method
- Put 4 inches of water in pot without Swamp Fire, cover and bring to a boil.
- Add seafood, return lid and time when steam escapes: steam crabs/crawfish 10–12 minutes; shrimp 8–10 minutes.
- Layer seafood and seasoning in a styrofoam ice chest, cover tightly and let stand 12 minutes; seafood will remain hot for up to 5 hours.
Caution: Only use styrofoam ice chests; plastic or other types may warp.
