The useable turtle meat makes a great turtle soup. But from a 5-lb. package, once thawed, and after the liquid/blood is drained there is about 3.75 lbs. of actual meat. Our experience after 2 purchases is that there is a lot of VERY tough and stringy connective tissue which has to be trimmed. After trimming some of that away, we have had about 3.5 lbs. of useable turtle meat which we then grind coarsely. Again, makes a great soup but don't expect to be able to use more than about 3.5 lbs. out of a 5 pound package.
