Thawing & Cooking Instructions

• Thaw in refrigerator 48–72 hours for best results.
• Cold water bath in sealed bag for 8–10 hours may be used to quick defrost.
• Preheat oven to 350°F. Place breast side up on a rack in a greased roasting pan. Cover wings and legs with foil; loosely tent entire bird with foil.
• Bake covered 2 hours, then uncovered 1½ hours or until internal temperature reaches 165°F. Baste with butter during the last hour if desired. Remove and rest 45 minutes before serving.

Slicing

Allow an extra 20–30 minutes rest after removal. Remove string or netting; slice off wings and legs, then cut remaining bird into ½”–¾” slices from wing to wing.
