Basic preparation
- In a 4 quart pot add 2 quarts cold chicken stock or water to the Gumbo Base Mix and cooked meat.
- When mix is dissolved, cover and bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Serve over cooked rice, pasta or grits.
Roux note: A roux is the base for many Cajun and Creole dishes. Etouffee often uses a lighter roux while a full gumbo may use a darker roux; cook time varies with desired gravy darkness.
