Apple Cake

This makes 2 loaf cakes, which can be frozen. Completely defrost before serving. Great when warmed a bit in the oven.

  • 2 cups sugar
  • 3 cups all-purpose flour
  • 3 cups chopped apples (peeled)
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1 cup chopped pecans or walnuts
  • 1 teaspoon salt
  • 1 ¼ cups vegetable oil
  • 2 eggs
  • 2 teaspoons vanilla
  • Preheat the oven to 350 degrees. Lightly oil two 9x5x3-inch loaf pans. Set aside. Combine the sugar, flour, apples, baking soda, cinnamon, pecans or walnuts and the salt in a large mixing bowl. Stir to mix. Add the vegetable oil, eggs and vanilla and stir to mix well. Spoon equal amounts of the mixture into the prepared pans. Bake until a tester inserted into the center of the cakes comes out clean, about 1 hour.
