Thawing
- Leave chicken in plastic bag.
- Refrigerator: approx. 24–48 hours.
- Cold water: approx. 1–3 hours.
Oven Cooking (Thawed)
- Preheat oven to 375°F.
- Remove chicken from bag and place breast side up in a greased baking dish.
- Cover loosely with foil and bake approx. 1½ hours; internal temperature must reach 165°F.
- For browner skin, bake uncovered and baste periodically with butter.
- Let rest approx. 10 minutes, remove string & serve.
Oven Cooking (Frozen)
- Cover tightly with foil & bake 1½ hours, remove foil and bake an additional 30 minutes.
Alternate Method
- Heat olive oil in a cast iron skillet over medium-high heat and bake for 20 minutes until cooked through.
