D'Agostino Capellini is a very thin, long-strand pasta traditionally known as angel hair. Made in-house using the "delicate" method developed in Palermo, Sicily, small quantities are extruded through bronze dies, looped over wooden rods, straightened, then air-dried in wooden cellars. This delicate pasta pairs best with light oil or cream-based sauces and seafood, and is also delicious in soup.
