Seafood Gumbo Preparation
- Combine water and roux in a large pot; stir continuously until roux is dissolved.
- Add onions, onion tops, parsley, crabmeat, chicken broth and seasonings; boil 45 minutes over medium heat.
- Add shrimp and oysters; simmer 25 minutes. Serve over rice.
Chicken & Sausage Gumbo Preparation
- Add roux to boiling water, stirring until dissolved (about 10 minutes).
- Add hen, smoked sausage, onions, parsley and seasonings; boil uncovered ~2 hours.
- Debone and cube chicken, return to gumbo; serve over rice.
