Simple Mardi Gras Gumbo
Ingredients (high level): 4–5 lb chicken (cut up), 4 tsp Konriko Creole Seasoning (divided), oil, 1 lb smoked sausage, 1/2 cup flour, onions, red/yellow/green bell peppers, garlic, hot water, 1/4 tsp Cajun Chef Cayenne Red Pepper, Konriko Wild Pecan Rice, green onion, parsley.
Preparation overview
- Wash and pat chicken dry; sprinkle 2 tsp Konriko Creole Seasoning.
- Brown chicken in oil; remove. Brown sausage briefly; remove.
- Make a dark roux with drippings and flour, then add onions, peppers and garlic.
- Stir in hot water, cayenne and remaining 2 tsp Konriko Creole Seasoning; add chicken and sausage and simmer 30 minutes.
- Cook Konriko Wild Pecan Rice per package, stir in green onion and parsley; serve gumbo over rice.
Makes about 8 servings.
