Mam Papaul's Corn Soup Mix is the original New Orleans–style corn soup entree in a 2.4 oz boxed mix. Mam Papaul traditionally made it with fresh corn, but canned corn works well. The soup uses a light brown roux consistent with New Orleans tradition.

Suggested Preparation
- You'll need a 3-quart saucepan, 4½ cups water or unsalted stock, 4 tbsp tomato sauce, and one 15 oz can of whole kernel or creamed corn.
- Add ½ lb of sausage, peeled & deveined shrimp, crabmeat, or chicken; optional: 2 medium diced potatoes.
- Place mix, corn, liquid, tomato sauce and desired meat in saucepan. Bring to a boil, cook 1 minute, reduce heat and simmer about 15 minutes until potatoes are tender. Stir occasionally; season to taste.
