Mayhaw Jelly from Ms. Margaret Brinkhaus of Sunset, Louisiana is made one batch at a time, hand stirred and poured into four-ounce jars. Ms. Brinkhaus uses only pure fruit, sugar, and pectin — no additives or preservatives — and grows her own flowers, herbs, and fruit used in production. Mayhaws are gathered from wild trees that grow under hardwood timber in southern U.S. swamplands; the Mayhaw season is only three weeks long. The jelly’s flavor is described as slightly fruity like apples with a zesty finish. Suggested uses in Louisiana include spreading on toast, bagels, biscuits, or serving alongside ice cream, coffee cake, or other breads; it can also be added to sauces or as a flavoring for meats and poultry.
