Preparation
- Remove seasoning packet from beans. Rinse and drain beans.
- Place beans in a 4-quart pot and add 10 cups of water; stir in the seasoning packet.
- Add meat if desired (options: 1 lb sliced sausage, cubed ham, or other meat). Beef or chicken stock may be substituted for water.
- Cover and bring to a boil. Reduce heat to medium, uncover pot, stir and simmer 2 to 2½ hours (add water as necessary) or until beans are tender.
- Serve over rice. Serves 8–10.
