In a large skillet brown ½ lb boneless pork loin diced and drain. Add ½ cup julienned carrots and ½ cup julienned bell pepper and sauté 3 minutes. Add 3½ cups water and the Black-Eyed Peas & Rice Mix. Stir well, bring to a boil, reduce heat, cover and simmer 25 minutes, stirring occasionally.
