Fried Fish or Shrimp
- Heat one inch of vegetable oil in skillet or use appropriate oil level in deep fryer to 350°F.
- Wash seafood in cold water and drain excess moisture.
- Pour Seasoned Fish-Fri onto a plate or into a plastic bag; roll or shake seafood in mix until coated.
- Fry until light golden brown; remove and drain on absorbent paper. Serve hot.
Hush Puppies
- Blend 1 cup Seasoned Fish-Fri, 1 cup cornmeal, 3 Tbsp. finely chopped shallots, 2 Tbsp. shortening and 1 tsp. baking powder.
- Add 1 lightly beaten egg and enough milk for a thicker batter. Drop by teaspoon into hot oil and fry until golden brown.
Also includes steps for frying soft shell crabs: wash and dry crabs, dip in egg and milk wash, bread thoroughly with Fish-Fri, press gently, and fry in 3–4 inches preheated 350°F oil until golden brown.
