Tenderized Alligator Tenderloins - 4 lb (4 × 1 lb)

Preparation

Use as directed in recipes that call for alligator tail meat. A suggested Louisiana sweet and sour alligator recipe:

• 1½ lb alligator (tail meat)
• 2 eggs, 2 stalks celery, 1 green bell pepper, ½ onion
• 8 oz pineapple chunks (unsweetened), 8 oz tomato sauce
• 1 cup pineapple juice, 1/3 cup cider vinegar, 1/3 cup light corn syrup, 1/3 cup firmly packed brown sugar
• 1/4 cup all-purpose flour, 2 tbsp all-purpose flour, 3 tbsp corn starch, 2 tbsp milk, 1 tsp salt, 1/2 tsp garlic salt, 1/4 tsp black pepper

Sauté celery and bell pepper in butter; add remaining ingredients except alligator and simmer 15 minutes, stirring every 5 minutes. Add alligator and cook 30 minutes. Add cooked rice, stir, cover and finish cooking. Allow to rest a few minutes before serving.
