Chicken & Sausage Gumbo
Pre-cook 2–3 lbs. of chicken and/or sausage. In a 4-quart pot add 2 to 2-1/2 quarts of cold chicken stock or water to the gumbo mix. When dissolved, cover and bring to a boil. Reduce heat and serve over cooked rice.
Seafood Gumbo
In a 4-quart pot combine 2 quarts of water and the gumbo mix. Mix well and bring to a boil. Add 2 lbs. of seafood; return to a rolling boil for 3–4 minutes. Remove from heat. If adding oysters, add now. Let stand covered for at least 30 minutes or longer. Serve over cooked rice.
