Handling & Reheating
Beignets don’t travel well. They can be fried up to 2 hours ahead and kept loosely covered at room temperature. To reheat, place on a rack in a shallow pan and warm in a 325°F oven 15–20 minutes.
Recommended frying oils: cottonseed oil; alternatives include canola, grapeseed, or clarified butter.
