First, the positive. The chicken arrived on time, and was well packed and completely frozen. After thawing and cooking, the chicken was unbelievably moist, and stayed moist even after reheating the next day. Negative: the instructions said to bake the bird for about 20 minutes per pound at 350. However after an hour in my high-end gas range, the 3lbs bird was not even half way cooked, so I broiled it for another 30 minutes which did the trick. Most disappointing: I found that the seasoning was not typical of south Louisiana. It might have been seasoned with paprika and other spices, but nothing that tasted familiar. The rice stuffing had a handful of tiny shrimp in it to serve more as a garnish than to offer any flavor, so the purveyor would have done well to not mention the shrimp as a feature of this product.

Oven Directions
- Preheat oven to 375°F.
- Remove lid from chicken and replace with foil.
- If frozen, bake 1½ hours.
- Carefully remove foil with oven mitt, then bake 1 hour uncovered or until internal temperature reaches 165°F–170°F.
Grill Directions
- Thaw in refrigerator or microwave on defrost setting.
- Prepare grill for indirect cooking using enough coals for 1½ hours of grilling time.
- Remove lid from pan and place on center of grill; insert meat thermometer into deepest part of breast.
- Cover grill and cook about 1½ hours or until internal temperature reaches 165°F–170°F. If cooking more than one chicken, add ½ hour per chicken.
