Handmade by La Boucherie in Houston, a deboned turkey, with only the wing bones left intact, is stuffed with boneless, skinless chicken and duck meat and layered with dirty rice stuffing. The stuffing is made from scratch from family recipes using only fresh ingredients without preservatives and hand-mixed to protect the texture. 15 pound Tur-Duc-Kens are vacuum sealed and flash frozen.

Slowly defrost in the refrigerator for 3 days before roasting.

Ground pork, onions, celery, bell pepper and La Boucherie’s own homemade roux are slowly cooked and smothered for several hours. Our own special blend of seasoning is added to ensure a very flavorful stock. During this time natural long grain white rice is prepared. All the above is then mixed by hand, cooled to USDA guidelines and added to the poultry. A Cajun favorite!
