A: They are already cleaned, whole, frozen, and ready to cook. Thaw under refrigeration and pat dry. Dip in a light egg-white-and-milk wash, coat with equal parts flour and cornmeal seasoned to taste, then fry at 350-375 F for 2-3 minutes until crisp and bright red. The tender shell, tail, claws, and body are edible; do not eat the head or the small calcium deposits behind the eyes.
