Boiling directions
Fill a large pot with enough water to cover seafood. Add seasoning and stir well. Bring to a rolling boil, add seafood and return to a boil. Cook according to seafood type, then turn off heat and let seafood soak to preferred flavor level. Soak time controls flavor: shorter soak = lighter seasoning, longer soak = stronger flavor.
Boil times (guideline)
- Crawfish: about 5 minutes; soak longer for more spice
- Shrimp: about 3 minutes; shorter soak to avoid overcooking
- Crabs: about 15 minutes; soak for deeper flavor
