My gator came quickly and the head was still attached. This was the talk of the friends Gathering. Thank you Cajun Grocer for making me the New Smoking King. The flavor and texture was unbelievable. I brined it in crab boil then smoked it with a MIXTURE OF HICORY AND APPLE AND CHERRY WOOD and chips. The kids ran around with the head and feet . it was just an amazing function. Ordered this whole alligator. It arrived quick, and frozen solid. Injected it, marinated it, and smoked it. What a treat for my family in California.
I ordered one of the medium gators, wrapped it in bacon and stuffed it with a cajun dressing. It was absolutely amazing. The gator was delivered on time and frozen.
Mine weighed a little over 12 pounds. We invited 14 guests and had a decent amount left over. The tail was the best part.

A: Cajun Grocer is only a distributor for the products on our website. IT does come to us already packaged. Unfortunately we are unable to alter the products.
Q: I just received my gator. Is there is trimming of fat that needs to be done or is everything already trimmed and ready to go? I see a lot of people talking about trimming the fat off the tail helps keep it from tasting fishy.
A: Our gators only come gutted and skinned. Fat trimming is completely optional.
Q: On average how big of a box are they shipped in
A: Since the size of the gator it self does vary being some gators are longer and skinner while others can be shorter but fatter. The size shipping container will also vary depending on the size of gator.
Q: Hi, I know the gator comes skinned and gutted, but is it also already trimmed inside the tail? Is the fat already removed that gives it that game taste?
A: There is no other preparations to the alligator other then being gutted and skinned.

A: Whole alligators are available year round.
Q: How long do you cook a medium gator if I am smoking it?
A: Roughly about 5 hours reaching an internal temperature of 165 degrees.

A: The thickest part of the alligator needs to reach an internal temperature of 165 degrees.
Q: When the gator arrives can I freeze it for a month before thawing and eating?
A: Yes! The order will arrive to you already frozen , you can just transfer it to the freezer and keep frozen until needed.
Q: I have a standing smoker that measures 15 inches wide by 28 inches tall on the inside, is there any chance I could fit a medium sized gator in there (possibly hanging from the top or something)?
A: Weight does not reliably determine a whole alligator's exact length, so we cannot guarantee that an 8-14 lb alligator will fit a 15 x 28 inch smoker. Please confirm the dimensions of the specific alligator before ordering. We also would not recommend planning to hang it unless your smoker manufacturer approves that method and the alligator can be secured safely.
Q: Roughly how many pounds of edible meat do you get from a medium gator?
A: The amount of meat each alligator would yield does vary depending on the initial weight of each gator. They do weigh between 8-14 lbs. Most of the alligator is edible other then the bones, feet and skull.
Q: Can you freeze leftovers after being smoked?
A: Alligator meat does freeze quite well. Cook the meat till it's just a few minutes away from being done, then freeze. Cooking the meat slightly underdone helps to avoid any chance of drying out when reheating. Wrap the meat tightly in plastic freezer wrap. Alternatively, place small portions of cooked meat in an airtight container that is safe for freezer storage. Any uncovered portion of the meat in the freezer makes it susceptible to drying out and freezer burn.
Q: Are the whole alligators vacuumed sealed when tit arrives at my house?
A: They are not vacuum sealed, but they are in a plastic bag frozen then shipped in a small cooler on dry ice.
Q: How long is the medium gator?
A: The whole alligators are not measured by length because they are curled for easier transit and cooking processes. they are measured by weight. The whole medium alligator weighs approximately 11 pounds.
Q: Does the alligator have all part still attached like the tenderloin and ribs?

Q: I want to purchase a medium or small gator for my birthday party Nov 16th. How do I cook it on a grill? How long for a medium gator and what seasonings?
A: Depending of the size of the gator you want to use 3 minutes per pound for a average time but most important is you meet temperature in the thickest part of the tail reaches 190 degrees. Common seasonings used on a whole alligator is garlic, onions, bay leaves, black pepper corn, dill seed ,thyme, and whole allspice. Season is based of of preference. Alligator meat typically taste and cooks like chicken.

A: Hello, Please allow at least 48-72 hours for your medium size gator to defrost.
Q: I have a large treager. Will a medium alligator fit in it whole? Will it make it to Colorado still frozen? Thanks for your time
A: A medium Gator should fit fine. Medium sized gators are 11-19 lbs and are generally curled up. It may fit stretched out, but should definitely fit in the shape that it arrives. We pack gators and all frozen items with plenty of dry ice, so that they arrive still cold. To ensure this, we do not send packages any method that would require more than a 3 day transit time.
