Apple Loaf Cake Recipe
This makes 2 loaf cakes, which can be frozen. Completely defrost before serving. Great when warmed a bit in the oven.
- 2 cups sugar
 - 3 cups all-purpose flour
 - 3 cups chopped apples (peeled)
 - 1 teaspoon baking soda
 - 2 teaspoons ground cinnamon
 - 1 cup chopped pecans or walnuts
 - 1 teaspoon salt
 - 1 ¼ cups vegetable oil
 - 2 eggs
 - 2 teaspoons vanilla
 - Preheat the oven to 350 degrees.
 - Lightly oil two 9x5x3-inch loaf pans. Set aside.
 - Combine the sugar, flour, apples, baking soda, cinnamon, pecans or walnuts and the salt in a large mixing bowl.
 - Stir to mix.
 - Add the vegetable oil, eggs and vanilla and stir to mix well.
 - Spoon equal amounts of the mixture into the prepared pans.
 - Bake until a tester inserted into the center of the cakes comes out clean, about 1 hour.
