Everyone knows that salad dressing, pickles, and even ketchup and mustard are made with vinegar. Many people arent aware that Vinegar is used so often in Cajun cooking.
Vinegar can be used to marinade poultry or meat, or add some acidity to gumbo or soup. I remember when my Grandmaw would make Cornichon out of mirlitons in vinegar. We would eat then with gumbo or rice and gravy.
