Savoie's Roux
Roux for gumbo - A dark roux is the starting point of Cajun and Creole cooking. The roux sauce acts both as a seasoning and a thickener. You can not make an authentic rich tasting Gumbo recipe without a great Roux that looks dark brown or chocolate color. Fortunately Savoie's makes a roux in a jar. Taking all the hard work out of preparing a seafood gumbo.
Why use a dark roux?
The darker the color the more pronounced the roux's flavor. But at the same time that a roux darkens, its thickening power lessens. This is because the intense heat from frying the flour in fat causes its starch chains to break down, and these smaller pieces are less efficient thickeners.
A dark roux is most often used to thicken rich, deeply flavored gumbos and etouffée. The Savoie's roux recipe is perfect and delivers exactly what you need to make a great gumbo with chicken and sausage.
For truly Cajun gumbo recipe, use Savoie's Dark gumbo roux. It is simply the best roux recipe for gumbo.
Is savoie's dark roux gluten free?
No, but Savoie's does make a gluten free instant roux.
