Sometimes known as "rice dressing", Dirty Rice is a well-known side dish for barbecues and Sunday dinner in South Louisiana. Combine ground meat with the rice and seasoning in Tony Chachere's Dirty Rice Mix for a great side dish as good as homemade. Makes a great stuffing!

Stove Top: 1. In a saucepan, brown 1 lb. ground meat. Drain fat. Add 2-1/4 cups cool water and contents of package. 2. Bring to a boil, reduce heat, cover and simmer 25 minutes, stirring occasionally. Before serving, stir in 1/4 cup chopped green onions.

Microwave: 1. In a microwaveable dish, combine 1 lb. precooked ground meat, 2-1/4 cups cool water and contents of package. Stir and cover. 2. Cook on high 5 minutes. Cook another 20-25 minutes on 50% power. Let stand covered 5 minutes. Before serving, stir in 1/4 cup chopped green onions.

CAJUN COUNTRY BREAKFAST Ingredients: 1/2 lb. breakfast sausage 4 large eggs, beaten 1/2 cup chopped fresh mushrooms 2-1/4 cups water 1 package Tony Chachere's Dirty Rice Mix Steps: In a large skillet brown breakfast sausage, drain fat. Add eggs and cook until firm. Add remaining ingredients. Stir well. Bring to a boil. Reduce heat. Cover. Simmer for 25 minutes, stirring occasionally. Yields 6 servings. RECIPE IDEA: Stuff finished dish into warm tortilla shells and top with grated cheese and salsa for a delicious breakfast burrito!
