Cajun Waldorf Salad

Serves 4

  • 1 Granny Smith apple, cored and chopped, skin on
  • 2 winesap apples, cored and chopped, skin on
  • 1 cup seedless raisins
  • 1/2 cup roasted and chopped pecans
  • 1 tablespoon lemon juice
  • Mayonnaise, just enough to lightly coat the apples
  • Salt and freshly ground black pepper

Toss all ingredients together, add the mayonnaise and season with salt and pepper. Chill for about 1 hour before serving.

If you need to have a dessert, I recommend Blue Magnolia lemon chiffon bread pudding. It is wonderful!
