Cajun Waldorf Salad

Serves 4
- 1 Granny Smith apple, cored and chopped, skin on
 - 2 winesap apples, cored and chopped, skin on
 - 1 cup seedless raisins
 - 1/2 cup roasted and chopped pecans
 - 1 tablespoon lemon juice
 - Mayonnaise, just enough to lightly coat the apples
 - Salt and freshly ground black pepper
 
Toss all ingredients together, add the mayonnaise and season with salt and pepper. Chill for about 1 hour before serving.
If you need to have a dessert, I recommend Blue Magnolia lemon chiffon bread pudding. It is wonderful!
