A: For food safety, any and all meats should remain refrigerated until used. After 2-4 hours out of the fridge they can become subject to producing bacteria that cause foodborne illnesses. We ship all of our perishable food products frozen with dry ice.

Andouille is a smoked sausage made using pork, originating in France.

The difference between sausage and andouille:

sausage is a food made of ground meat (or meat substitute) and seasoning, packed in a cylindrical casing; a length of this food while andouille is a spiced, heavily smoked, cajun pork sausage, often made from the entire gastrointestinal system of the pig.

The traditional ingredients of andouille are primarily pig chitterlingstripe, onions, wine, and seasoning. It is generally grey in color and has a distinctive odor.Andouille is a staple of Louisiana Cajun cuisine, where it is a coarse-grained smoked sausage made using porkgarlicpepperonionswine, and seasonings. Savoie's Andouille is one of the most popular Andouille sausages in Louisiana.

Though somewhat similar, andouille is not to be confused with "hot links" or similar finely ground, high-fat, heavily peppered sausages. Savoie's produces one of the best andouille sausage recipes.

Went out on a limb and picked this up. This is a great tasting Andouille. Not as hot as Thomas Ragin’ Cajun Smoked Andouille Sausage "Medium", so that is a plus. Works great for those that can handle light heat. I used it for my red beans and rice.

Cooked for a large group. All used to flavorable spicy cajun food. Way too hot to not have a "spicy" label. Not the first time I've had that problem with The products. Lot of $$ to spend with a group mess up

Only thing I can say is "I LOVE IT"

Robert Dantin 2021-09-24 16:29:49

Original recipe is much to hot ???? ! Good andouille is well seasoned not that peppery

Chelsea 2021-03-24 14:37:10

It needs a spicy label on the outside of the package. It is very spicy.

I regularly buy this andouille to use in making red beans & rice, and jambalaya. It keeps perfectly in the freezer, too.

I like this brand as it is consistently very good. However, be aware that the spices can be too hot for “hot spice challenged” guests.

I love the texture if this stuff. Larger chunks of meat than you'd normally expect in sausage makes it great. Another tasty addition to beans and rice, and another thing I no longer need to cram into my suitcase when I'm down there
