Marinated Vegetable Salad

Makes 6 servings
- 3/4 cup fresh lemon juice
 - 3/4 cup vegetable oil
 - 3 tablespoons sugar
 - 1 tablespoon Creole mustard
 - 1 teaspoon dried oregano
 - 1 teaspoon salt
 - 1/2 teaspoon black pepper
 - 1 cup cauliflower flowerets
 - 1 cup broccoli flowerets
 - 1 cup thinly sliced carrots
 - 1 cup sliced fresh mushrooms
 - 1 small purple onions, sliced and separated into rings
 - 1 cup thinly sliced zucchini
 - 1 cup thinly sliced yellow squash
 
Combine the first 6 ingredients in a jar. Cover tightly and shake vigorously. Combine the vegetables in a large bowl and add the dressing. Toss, cover and chill before serving. Enjoy!
