Dirty rice is a delicious traditional Cajun rice dish which is made "dirty" from the brown color of chicken liver and gizzards. It is prepared with sausage (or ground pork/beef), bell peppers, celery, and onion and garnished with parsley. Dirty rice is excellent as a main course, a side dish, or used as a poultry stuffing.
